TikTok Recipes: Russian

From Italian food to Asian food, we’ve seen some incredible dishes over the past few weeks. This week, however, I’m introducing a whole new genre...Russian recipes!
To begin with, we have a traditional Russian soup known as Rassolnik. If you love pickles, this is just the dish for you!

10 cups chicken stock
3 potatoes diced
¼ cup barley
1 jar of pickles diced or shredded
Juice from a jar of pickles
1 carrot shredded
2 onions diced
Leftover meat of any kind (preferably chicken)
Salt and pepper to taste
First, bring your chicken stalk to a boil in a large pot. Add in your diced potatoes, barley, pickles, however much pickle juice you desire, onions, carrots, and chicken. Let your mixture simmer for about 30 minutes (or until your potatoes are soft) and season with salt and pepper to taste. That’s all it takes! It’s a super quick and yummy meal.
Next up, is a Russian meatball dish that looks delicious. To clarify, @alyssuhforever’s TikTok recipe puts a Californian spin on it, meaning they are baked and don’t contain any bread making them a bit healthier.

1 small onion
1 small potato
2 packs ground turkey
Salt and pepper to taste
Shredded cheese to top
To start, shred your onion and potato and combine it with your ground turkey in a large bowl. Then, add your eggs, salt, and pepper, and combine it all. Next, shape your mixture into balls and place them into a baking dish. Sprinkle some shredded cheese on top before setting them in the oven at 375 for 45 minutes.

Russian Chocolate Buttercream Ingredients

2 sicks (1 cup) unsalted butter
1 tsp vanilla extract
¼ tsp salt
1 cup sifted cocoa powder
1 14 oz. can sweetened condensed milk
Begin by whipping your sticks of butter until they turn lighter in color. Add in your vanilla extract, salt, cocoa powder, and mix thoroughly. Then, add ¼ of your can of sweetened condensed milk, mix, and repeat three more times until you use the whole can. Once your buttercream has a beautiful whipped consistency, it’s ready to be used!
Last, but not least, we have Syrniki! This is an extremely popular pancake in Eastern Europe. Although they seem like a simple breakfast item, these cakes can be extremely addicting.

16 oz. lifeway farmer cheese
1 tbsp vanilla extract
4 tbsp sugar
½ tsp pink salt
¾ cup all-purpose flour (have extra for dusting)
Canola or vegetable oil
Powdered sugar and honey to top
Combine your cheese, egg, vanilla extract, sugar, pink salt, and flour in a bowl and mix well. Take some flour and dust a surface to begin turning chunks of your mixture into pancake shapes. Once these pieces are in a round, pancake form, add them to a pan with oil under medium heat. Fry them until golden brown, top with powdered sugar and honey, and enjoy!
